  • fresh pumpkin seeds, from 1 pumpkin
  • olive oil spray
  • kosher salt, to taste

Instructions

  1. Extract the seeds from the pumpkin, separate from pulp, rinse in a colander to remove residue.
  2. Lay seeds on a towel, pat dry, and air-dry for crispiness, ideally for a few hours.
  3. Preheat the oven to 300F.
  4. Evenly spread seeds on a sheet pan, drizzle with olive oil, and season with salt.
  5. Roast seeds in the oven for 20-30 minutes until golden, stirring every 5 minutes.
  6. After roasting, cool seeds on the sheet to enhance crunchiness.
