Soba Noodle Veggie Stir Fry

A vibrant and flavorful stir-fry featuring soba noodles and an array of colorful veggies

Ingredients

  • 1 tablespoon Sriracha sauce
  • ¼ cup chopped bell pepper
  • ½ teaspoon ground ginger
  • 2 ounces uncooked soba noodles
  • 1/2 tablespoon toasted sesame oil
  • ½ teaspoon minced garlic
  • 1 large pasture-raised egg
  • ¼ cup chopped onion
  • ¼ cup broccoli florets
  • 1 tablespoon coconut aminos
  • 1 tablespoon creamy nut butter

Instructions

  1. Boil water in a medium pot, cook soba noodles until tender, about 4-6 minutes.
  2. In a large skillet, heat sesame oil over medium heat.
  3. Sauté garlic, ginger, onion, bell pepper, and broccoli until softened, about 3-4 minutes.
  4. Drain noodles and add to the skillet with vegetables.
  5. Crack and scramble an egg in the skillet, then mix with noodles and veggies.
  6. Stir in coconut aminos, Sriracha, and nut butter.
  7. Serve the flavorful stir-fry warm.
